Classic recipe for making tea
Before brewing, an empty teapot needs to be warmed up properly. Normally, it is three, four times rinsed with boiling water. When the teapot is warmed up, and the water boils “white key”, the portion of dried tea is put into the kettle and immediately poured with boiling water. It’s necessary to be careful and make sure that there is no strong smelling products around. Otherwise the flavor of the tea will be irretrievably lost!

At first (depending on the kind and variety of tea), the water is only half full poured into the kettle, or only one third (black with green) or even a quarter (green tea). Having poured the brew for the first time, the kettle should be quickly closed with the top, and then with the cloth, covering the holes in the top and nose. This is necessary in order to prevent evaporating of the aromatic essential oils together with the steam. It’s not recommended to cover the teapot with various pads and other heaters - in this case the tea kettle will start to rot and will become tasteless.

Tea needs to be brewed. Depending on the type of tea and water hardness, the brewing time can vary from 3 to 15 minutes. The best varieties of black tea, when brewed in soft water, are recommended to be brewed not more than 4 minutes. This time is sufficient for tea to be extracted and not lose its flavor. Green teas, whose tastes are very important, are recommended to to be brewed for 5-8 minutes, depending on the variety. When the tea is brewed, the teapot is poured with with boiling water, and not fully, but leaving some space under the top. Filling-up boiling water is necessary to maintain the same high temperature of the water. The constancy of temperature while tea brewing is more important than its initial value.

At the end of the brewing process it’s necessary to draw attention to the foam. If there is a foam, then tea has been brewed correctly. If there is no foam, then at some point there was a violation of the brewing rules. The foam should be stirred a little, in order not to be collapsed on the walls of the kettle, but to enter the infusion. Once the tea is brewed - it is poured into cups and served immediately.

English way of tea brewing
The British should be one of the most tea loving nations. Traditions of English tea drinking are widely known throughout the world. And, of course, there’s their etiquette, as well as a way of tea brewing!
The British prefer to drink tea with milk or cream. Previously it’s necessary to warm up the dry kettle. Then tea is poured there in the calculation of 1 teaspoon per cup of water plus one teaspoon “for teapot”. The kettle is immediately poured with boiling water (twice) and being brewed for 5 minutes. While the tea is being brewed, in the preheated cups is poured heated (not boiled) milk by 2-3 tablespoons, and then in the milk is poured tea. That should be the sequence, not vice versa! Ice tea
How to make:
Iced tea is not made from the cold tea! For this traditional American beverage, which in Northern America is called «Iced Tea», You will need hot, at least double-strength tea and ice cubes. In addition, you can add lemon juice and sugar. In contrast to conventional chilled tea, iced tea refreshes and a bit overwhelms. Its aroma and taste are felt fuller, the tea invigorates incredibly. In Northern America iced tea is usually used in the hottest time of the year to quench the thirst. Its simple recipe is the base for a number of variants. For example, you can add a pinch of ginger or cardamom to the tea, for flavour put the leaves of peppermint or lemon balm, current berries or the slices of pineapple.
This tea can be mixed with fruit juice – pineapple, cherry or orange, as well as with gin or rum.
To prepare the tea pour the boiling water to the tea leaves or tea bags, let brew for 4 minutes, then drain (if tea leaves). Add sugar and lemon juice to taste. Fill a narrow tall glass on 2/3 with ice and pour hot tea. Serve cold tea with a straw for drinks.
Ingredients:
For one serving: 2 teaspoons or 2 bags (4 grams) of black tea („Ceylon Orange Pekoe” or „Assam” recommended), 200 ml of boiled water, ice cubes, sugar, lemon juice.

TEA «A LITTLE PIECE OF ICE»
How to make:
Brew regular tea, add sugar to taste. Pour the chilled tea into the pitcher with ice, add lemon juice and pour into tall glasses. Put into each glass a slice of lemon, sprig of mint and serve.
Ingredients:
For three servings: black tea („Ceylon Orange Pekoe” or „Assam” recommended )– 6 g (three teaspoons or bags), crushed ice – 3-5 cubes, sugar to taste, 1 lemon, peppermint – 2-3 sprigs.

COLD TEA WITH SPICES
How to make:
Pour boiling water to tea, spices and mint. Drain after 6 minutes and add sugar. Mix the cooled mixture with lemon juice and carbonated water. Serve with ice.
Ingredients:
For three servings: black tea („Ceylon Orange Pekoe” or „Assam” recommended )– 6 g (three teaspoons or bags), powdered ginger - 2 г., a ;piece of cinnamon stick, 4 cloves, 2-3 sprigs of mint, sugar to taste, juice of three lemons, 3-5 ice cubes.

TEA-LEMONADE
How to make:
Mix tea, wine, sugar, lemon juice and honey in the blender. Chill and serve in glasses with ice.
Ingredients:
For three servings: strong black tea („English breakfast” recommended), 1 lemon, 0,5 bottle of white wine, 5 tablespoons of sugar, 2 teaspoons of honey, 7-8 pieces of crushed ice, carbonated water if desired.

ORANGE TEA 1
How to make:
Freeze orange juice in the mould. Brew tea, add sugar, chill, pour into a glass. Add ice cubes, gin and lemon juice. Garnish with orange circles.
Ingredients:
For one serving: 125 ml of water, 1/2 teaspoon of tea („Ceylon Orange Pekoe” or „Assam” recommended), 2 grams (1 teaspoon) of sugar, juice of 1/4 lemon, juice of half an orange, 50 ml of gin.

ORANGE TEA 2
How to make:
Put washed peels of lemon and orange into a saucepan, add orange syrup, dry tea, pour 1 litre of boiling water, let brew for 5 minutes, drain and serve.
Ingredients:
Peel (zest) of 1 lemon and 1 orange, 50 g of orange syrup, 25 g of dry tea «Ahmad Tea Ceylon Orange Pekoe».

BEVERAGE «TEA BALM»
How to make:
Carefully chop and mix dry leaves, herbs, fruits, add dry tea and mix again. Store in glass or porcelain bowl with tightly closed lid. Brew «Tea balm» as follows: scald a small enamelled saucepan or cup with boiled water, pour the prepared dry mixture at the rate of 1 full teaspoon in two glasses of boiling water. Pour the boiling water to the dry mixture, stir, cover the bowl with a lid tightly, put a towel on top and let brew for 5 - 7 minutes. Serve the beverage hot and fresh. Since the leaves, fruits and berries gradually give up their nutrients, you can add boiling water to the brewed mixture during the tea drinking.
Ingredients:
1 teaspoon of peppermint, chamomile, lemon balm, Hypericum perforatum, leaves of blackberry and raspberry, linden blossom, birch leaves, rosehips, blueberries, red fruits of mountain ash (all the components in dry form), 3 glasses of tea «Ahmad Tea English Breakfast».

TEA WITH CHAMPAGNE RUSSIAN
How to make:
Pour the tea with boiling water, after 5 minutes strain, add sugar, lemon juice and chopped lemon peel spiral. After cooling, pour the sweetened flavoured mixture into the vessel for punch, put a few slices of lemon and pour the champagne.
Ingredients:
4 teaspoons of tea «Ahmad Tea Earl Grey», 0,25 litres of boiling water, juice of half a lemon, peel of 1 lemon, 1 bottle of champagne or sparkling wine, sugar to taste.

TODD
It is a traditional British hot drink, reminiscent of grog. Todd is usually made with whisky but you can also use rum as in the recipe. The main thing that you need to drink Todd hot!

How to make:
Brew tea, put sugar into the glass and pour with tea on 2/3 of the volume. Then add cinnamon, cloves and lemon peel pour rum on 1/3 of the volume. Serve hot as a rule.
Ingredients:
For one serving of Todd: 2 g of black tea «Ahmad Tea Ceylon Orange Pekoe», 2 teaspoons of sugar, cinnamon, cloves and lemon peel to taste in a ratio of 1:2:1, Jamaican rum.

TEA LIQUEUR
The tea liquor is best made with green tea Gunpowder. It is recommended to use spices, especially vanilla, cinnamon, extract of pineapple or raisins. You can simplify the process of liquor making by using the diluted 90-degree alcohol or grain vodka.

How to make:
Brew the tea and let it stand for 4-5 minutes. Pour the brewing with leaves into grain vodka and leave for the night, in the morning drain, mix with sugar syrup and pour into bottles. Before use, it is desirable to let it stand for several days.
Ingredients:
100 g of green tea «Ahmad Tea Gunpowder», 250 ml of water, 3 l of grain vodka, sugar syrup (350 g of sugar, 2 litres of water).

FIRMING TEA
The tea is brewed with milk, not with water. To make the tea fresh and hot you should do everything very quickly, as tea reheating is not possible, because the yolk will minimize.

How to make:
Put aside one cup of milk, boil the rest of milk and brew the tea in it. Let it brew for 4-5 minutes, then drain. While tea is brewing, beat egg yolks with honey to form foam, gradually adding the cold milk. Continuing to whisk the cream, pour small portions of hot tea. Serve the drink hot.
Ingredients:
750 ml of milk, 6 teaspoons of «Ahmad Tea Assam TFBOP», 3 yolks, 1 tablespoon of honey.

SCOTTISH TEA

Scottish tea is a kind of Highlanders’ response to Irish neighbourhoods, who has created Irish coffee at the time. The same as the Irish, the Scots mixed the basic drink – tea – with the famous Scotch whisky: malt and grain.

How to make:
Make strong tea. Put sugar into the glass, pour whisky and add hot tea. Beat the cream, add a bit of nutmeg and put into the tea. You can drink Scottish tea also through a cold layer of whipped cream.
Ingredients:
750 ml of strong tea «Ahmad Tea English Breakfast», 4 teaspoons of sugar, 160 ml of Scotch whisky, 250 ml of cream, 2-3 g of grated nutmeg.

OLD ENGLISH PUNCH
Punch is a British invention. For the first time this legendary drink was made by British sailors in India in 1552.

How to make:
Rub the sugar on the peel of lemon or orange, melt in a pan to the light-yellow colour. Take off the heat, slowly pour a glass of red wine and heat until the sugar is completely dissolved. Pour the rest of wine into the pan and heat again without boiling. While the wine is heated, make a strong tea (7-9 teaspoons per a litre of water) and pour the hot tea in the red wine. Season the mixture with Curacao and sweeten a little.
Ingredients:
20-30 g of sugar, 1 orange, 1 lemon, 1 bottle of red wine, 3 cups of strong tea «Ahmad Tea Royal Blend», 40 ml of Curacao.
